Who we are
Jaimie grew up on Canada’s wild west coast and trained as a chef in the heart of San Francisco’s culinary scene where the sustainable food movement thrives. Over the years she has worked in restaurants ranging from small hostels to world-renowned establishments.
Her creations reflect a local coastal vibe but are also informed by her many travels to other parts of the globe — Peru, Bali, Italy, Budapest, Portugal, the UK, Mexico, Colombia, New York, Vancouver. You will often find these international influences in her delicious preparations.
Jaimie is also an accomplished mariner and fisher. She appreciated the challenge of working on coastal charter boats where she shared her passion for all things ocean and culinary. These days, the TWC crew enjoy offering True North Tug Tours guests a variety of on-board catering options.
In the last few years Jaimie has been able to focus solely on Taste of the West Coast, growing her business into a thriving operation. TWC dips have become a customer favourite and are sold in many locations on Vancouver Island and Hornby. Catering for individuals, non-profits and businesses keep her and her crew busy planning and executing a wide variety of occasions from small intimate dinners to full service weddings.
